Perfect Fall Day

It was a perfect fall weather here  yesterday. Christian had a day off school for Columbus day.What to do to from hearing the words " I am bored Mom " ???  Lets head to the Pumpkin farm.

They loaded up the wagon for the hayride to the pumpkin patch.

Christian found some pumpkins that he thought were really cool. It is a boy thing.

 

Christian then spotted this pumpkin... Only $56

 Finally a few good normal size pumpkins.

Time to go into the haunted corn maze.

They made it out 

Time for some fun and games.

 Visit to the  farm animals .

After 2 hours  of running around I heard i am tired.

My Glen

Hello My blogging friends . It has been a really ruff  3 and 1/2 months . I am so thankful for the great support that i have had. Without God ,My family and friends i don't know how i would have made it this far.it  .This road i  travel now without my soul mate and best friend is not easy. I am just taking it one day at a time .

My Glen touched more lives in his short time then he even knew . I was the luckiest women to such a wonderful man in my life for 33 years .

Hi my blogging friends.I just wanted to thank you all for your thoughts and prayers . I really don't know what i would have done without all my family and friends to help me.It has been a really hard time for me and my family.I would like to share with you what happened.On June 17th My husband (Glen) was always so excited when we had great weather and it was the weekend that meant motorcycle time.He had been away the earlier part of the week travelingand was glad to be home . Told me he was going for his regular 1hr. ride would be back and barbeque kissed me goodbyeand said i love. you. I did not know until later that our 11 year old (Christian) Had tallked to Glen and Glen told him he would see him in a hr and after dinner he would play the diving game in the pool with him.We live in a suburb of Chicago and after our subdivision is nothing but empty country roads.Glen was only 28 minutes down the road when a Pickup truck blew a stop sign hit him into on coming traffic a suv .Glen had done everything to stop they had 60 feet of skid marks from him trying to stop and drop his bike to let it slide . This was also investigated by a cop friend of ours who does accident reinactments .Glen also had a helmet on never went out without it. 45 minutes later a police car pulled up in front of my house . I knew right then i ran out and ask what happened to my Glen .He ask a few question and told me that there had been a accident.Then gave me the phone and i talked to er dr.He told me Glen was in serious condition and was being air lifted to Peoria ,Il 2 hrs. away. I need 2 pack clothes i would be their for a while . I ask if i could talk to him was told i could'nt he had tubes in his throat. I begged them to put a phone by his ear the said they could'nt. Thanks to great neighbors and friends that came to help drive me and take care of Chritian. The 2hr drive seemed like it lasted forever . I called my church and friends to pray.We had 100's of people praying. I knew about a hr into the drive he was gone i could not stop crying.I did not tell my friends When i got to hospital and they did not take me to him right away i knew my feelings had been right.Glen had fought hard they lost his pulse 2 times . He was given 6 pints of blood . He had broken ribs, severed leg, smashed pelvis and damaged spleen which was what. i believed killed him.They had try to stablize him for surgery but, that did not happen .I lost the love of my life, my soul-mate, my best friend. The states proscutor is pressing crimanal charges.I don't know yet if the guy was texting or on the phone.Glen was a very safe driver he took motorcycle classes read every book he could on motorcycle riding.He would drive his bike around the block just to check and make sure everything was in working condition before he left.My life and my boys life is changed forever.The day before this we celebrated Glen's birthday. My boys had plans and gifts for Fathers day which was 2 days later.

This picture was taken August 2010 at Sturgis South Dakota. How funny when my Glen developed this and showed it to me the sign behind him says Be prepared to meet thy God. My Glenie was a godly man he played on church worship team 14 yrs , lead a homegroup for 6 yrs. and brought many family and friends to God. even though I know he is in a better place and i will be with him again . I still ache for him. I part of me died with him . I had been with my Glenie since i was 16 yrs old . We were know in our neighborhood as the honeymooners . We always held hands and kissed. He was the love of my life.....and always will be.

Prayers needed

Dear blogger friends please pray for me and my 3 sons . My best friend my husband was tragicallykilled in a motorcycle accident. I don't know when  will be back on.Thanks Linda

The new summer craze

It seems like every summer that we have some kind of toy craze here.We have had the Webkinz,Gogos,Mighty Beanz,Smencils,and food erasers. What could possibly be next ?????? Squinkies ( for boys) is the new HOT toy here.What is a Squinkies??They are squishy tiny toys that come in various looks; people, cats, dogs, etc. They each come in their own bubble .Is this big in your area??

Grilled chicken with warm mango salsa

I  decided to try new recipe from one of my favorite cookbooks .Everything i have made from this books is GREAT!This is a perfect recipe for  a summer barbecue

 Great cookbook

ingrediants
4 boneless chicken breast trimmed of all fat
nonstick cooking spray
salt and freshly ground black pepper
1 medium red onion cut into small diced cubes
1 smaall jalapeno pepper stemmed seed and diced
1 medium tomato small dice
1 large mango skin removed  and small diced cubes
grated zest and juice of 2 small limes
2/3 cup chopped cilantro
1 small avocado  peeled and sliced

 1.Preheat grill spray chicken breast lightly with cooking spray
season with salt and pepper to taste. grill chicken until it is just cooked through,about 3 min. per side transfer chicken to plate and cover.
2.Meanwhile heat  a large skillet spray with cooking spray
add onion . Season with salt and pepper and cook until almost tender 5-6 min.
Then add jalapeño ,tomato and mango and cook salsa stir occasionally until it is just heated through about 4-5 min.
3.Add lime zest lime juice and cilantro to salsa .Serve the chicken with warm salsa and avocado slices on top .

GRILLED CHICKEN PINEAPPLE SANDWHICH

 Found this recipe in my husbands Mens Health magazine last year.  It is really easy . The  sandwich is a spicy-sweet combination of teriyaki-glazed chicken,  grilled pineapple, and hot  jalapenos. We love it!!!

Chicken breast in marinating Tupperware  container

 I prefer Pepper jack  cheese instead of the swiss

all on a toasted wheat roll

Ingredients :
4 boneless, skinless chicken breasts (4-6 oz each)
teriyaki sauce
4 slices swiss cheese I use pepper jack instead
4 pineapple slices (1/2" thick)
4 whole-wheat buns
1 red onion, thinly sliced
Pickled Jalapenos

Combine chicken &enough teriyaki sauce to cover in plastic container.
and marinate in the refrigerator for at least 30 minutes and up to 12 hours.
Heat grill until hot Remove the chicken from the marinade & place on the grill; discard any remaining marinade. Cook for 4 to 5 minutes on the first side; flip and immediately add the cheese to each breast. Continue cooking until the cheese is melted & the chicken is lightly charred & firm to the touch. Remove & set aside.
While the chicken rests, add the pineapple&the buns to the grill. Cook the buns until they're lightly toasted & the pineapple until it's soft and caramelized, about 2 minutes per side. Top each bun with chicken, red onion, jalapeno slices, & pineapple. If you like, drizzle the chicken with a bit more teriyaki sauce.
