The new summer craze
It seems like every summer that we have some kind of toy craze here.We have had the Webkinz,Gogos,Mighty Beanz,Smencils,and food erasers. What could possibly be next ?????? Squinkies ( for boys) is the new HOT toy here.What is a Squinkies??They are squishy tiny toys that come in various looks; people, cats, dogs, etc. They each come in their own bubble .Is this big in your area??

Grilled chicken with warm mango salsa
I decided to try new recipe from one of my favorite cookbooks .Everything i have made from this books is GREAT!This is a perfect recipe for a summer barbecue
ingrediants
4 boneless chicken breast trimmed of all fat
nonstick cooking spray
salt and freshly ground black pepper
1 medium red onion cut into small diced cubes
1 smaall jalapeno pepper stemmed seed and diced
1 medium tomato small dice
1 large mango skin removed and small diced cubes
grated zest and juice of 2 small limes
2/3 cup chopped cilantro
1 small avocado peeled and sliced
1.Preheat grill spray chicken breast lightly with cooking spray
season with salt and pepper to taste. grill chicken until it is just cooked through,about 3 min. per side transfer chicken to plate and cover.
2.Meanwhile heat a large skillet spray with cooking spray
add onion . Season with salt and pepper and cook until almost tender 5-6 min.
Then add jalapeƱo ,tomato and mango and cook salsa stir occasionally until it is just heated through about 4-5 min.
3.Add lime zest lime juice and cilantro to salsa .Serve the chicken with warm salsa and avocado slices on top .

GRILLED CHICKEN PINEAPPLE SANDWHICH
Found this recipe in my husbands Mens Health magazine last year. It is really easy . The sandwich is a spicy-sweet combination of teriyaki-glazed chicken, grilled pineapple, and hot jalapenos. We love it!!!
Ingredients :
4 boneless, skinless chicken breasts (4-6 oz each)
teriyaki sauce
4 slices swiss cheese I use pepper jack instead
4 pineapple slices (1/2" thick)
4 whole-wheat buns
1 red onion, thinly sliced
Pickled Jalapenos
Combine chicken &enough teriyaki sauce to cover in plastic container.
and marinate in the refrigerator for at least 30 minutes and up to 12 hours.
Heat grill until hot Remove the chicken from the marinade & place on the grill; discard any remaining marinade. Cook for 4 to 5 minutes on the first side; flip and immediately add the cheese to each breast. Continue cooking until the cheese is melted & the chicken is lightly charred & firm to the touch. Remove & set aside.
While the chicken rests, add the pineapple&the buns to the grill. Cook the buns until they're lightly toasted & the pineapple until it's soft and caramelized, about 2 minutes per side. Top each bun with chicken, red onion, jalapeno slices, & pineapple. If you like, drizzle the chicken with a bit more teriyaki sauce.
