STRAWBERRY TRIFLE

Another easy dessert recipe. That is so yummy! My son Christian loves helping me  with this. He usually eats more then he adds to the bowl.  He did a pretty good job of layering.

Ingredients
1 store bought angel food cake
1  8 oz container of fat free cool whip
1 box of 1.5 oz  sugar free fat free white chocolate instant pudding
  1 container of strawberries
 mix pudding according to box
  Take the  cake and break it into cubes (squares). Place  pieces in bottom of glass bowl or trifle dish then add a layer of pudding next strawberries. Repeat process of layering with cake,  pudding,and berries. Top with cool whip  and garnish with berries .

Whats for dinner ??

Tonight lasagna roll ups. This is a quick easy and pretty health lasagna.
You need 1 and  a 1/2  tablespoon of garlic. I used the garlic in a jar i was out of fresh garlic and this is pretty close to that.  1 teaspoon of Italian seasoning and  1 teaspoon of red pepper flakes . My family likes hot and spicy so i use a little more .

Add spices to ground turkey and brown. I make my own homemade sauce .  you can make your own or use jar sauce.add enough sauce to cover bottom of pan.  Get your water boiling for lasagna noodles.

Let turkey meat and sauce simmer for about 10 minutes.
After that  i add a handful of Parmigiano Reggiano cheese.

Then add meat sauce to the cooked noodle sprinkle shredded Italian I use the  low fat cheese. You then roll .

 Rolled lasagna noodles 

 Top with  more sauce after you assemble. cover and bake   at 350 for  35 minutes . then uncover and add shredded mozzarella cheese on top. Again i use the low fat. let melt for 3-5 minutes .

Memorial Day M&M Treats

With Memorial Day coming up I want to make a treat for the kids. I found this  idea on SCS. Here is what you I used .Adhesive,  1 piece of patriotic paper cut to 5 X 4, tube of M&M minis, ribbon, star garland Star punch I did 3 stars  punch out a few stars for embellishment and a button. You can get creative and use whatever you want. I have also made these using  rolls of lifesaver candies too.These are also good for the  4th  of July .

GRANDMA'S NO BAKE ICEBOX CHEESECAKE


Making this cheesecake brings bake memories.I remember going to my my grandma's house (which was only a block away) and helping here when she baked . She made this cheesecake always  in the summertime.

1 (3 oz.) pkg. lemon Jello I have also use raspberry and strawberry Jello.
1 cup boiling water
1 cup sugar
3 tbsp. lemon juice
1 tsp. vanilla
1 (8 oz.) pkg. cream cheese
1 1/2 c. graham crackers
1/4 c. melted butter
1 can evaporated milk (real cold)

Dissolve Jello in boiling water, add sugar, flavorings and cream cheese. Beat with mixer until smooth, set in refrigerator to set. Crush crumbs, add butter. Press into 9"x13" pan. Beat milk until thick and standing upright. Add to chilled mixture. Pour on top of crumbs. Sprinkle a few crumbs over top and chill 1 hour. Add strawberries for garnish on top.  Enjoy!!

Oreo Cookies in a Cloud

With the weather getting warmer,It is 88 degrees here today. I like to make quick easy desserts that i don't have to use the oven and heat up the house.This is one of my boys favorites .

Ingredients:

1 (4 ounce) container Cool whip topping, thawed  I use fat free
1 (4 ounce) box instant Oreo cookie pudding mix
2 cups cold milk I use 1%
oreo cookies I use reduced fat


Directions:
Prep Time: 10 mins

Total Time: 25 mins

Divide thawed whipped topping among 4  glasses, using about 1/3 cup in each.

With the back of a spoon, make a depression in the center and spread topping up the sides of the glasses.




Cool Whip in glass

Prepare pudding mix with milk as directed on package for pudding.

Spoon pudding mixture into glasses.

Chill. Garnish as desired. I crush Oreo cookies in a ziploc bag and sprinkle on top.
I top with a Oreo cookie. Yum!!!

The little things



 Can't believe it is Monday . The weekend went by way to fast. Hope everyone had a great Mothers Day. My whole weekend was great. I received lots of nice gifts from my boys. The things i cherish the most are not the things they buy from the mall . The card  Christian made me is one  of the things that i cherish . I know this probably will be the last year of getting a homemade card  from him .I love how he signed his last name  .





Christian  always wants to try something new .He has been driving me crazy to get him tennis rackets . We went and bought some this weekend. He did great for his first time. We told him to try it out for a few more weeks if he still likes it he can take lessons. The smile on his face is priceless. Yes, The little things  mean the most.

Oldie but still yummy


This recipe has been around for a long time . It is very easy to make and yummy.  If you have never tried this you must.

 Jello Poke Cake

What You Need:
1 pkg. (2-layer size) white cake mix
1 cup boiling water
1 pkg. (3 oz.) JELL-O Strawberry Flavor Gelatin I have use raspberry too.
1/2 cup cold water
1 tub (8 oz.) COOL WHIP Whipped Topping, thawed
Make It


PREPARE cake batter and bake as directed on package for 13x9-inch pan. Cool cake in pan 15 min. Pierce cake with large fork at 1/2-inch intervals.

ADD boiling water to gelatin mix in small bowl; stir 2 min. until completely dissolved. Stir in cold water; pour over cake. Refrigerate 3 hours.

FROST cake with COOL WHIP. Refrigerate 1 hour. Then try and not eat the whole cake yourself.

Bailey is 41/2 years old and Jax is 11/2years old . We are always getting in trouble together ....Especially Jax
I'm in trouble again for digging in Mom's plants .
I have my own pool . I love to go in and cool off.
I am Bailey sweet and innocent until.....i see the mailman,ups man or FedEx man .
Here i am waiting for  for the mailman he always comes at 1 o'clock.

Garage sales

We had our town wide garage sales this weekend . I always mark these dates on my calender.I was hoping to find a few good things .I did find a few big things . I found both of these Coca Cola machines . Both are from the 1950's The big one works and the little one needs a little bit of repair work. These will make a nice addition to my Coca Cola collection .I also  got the Coca Cola shelf from the same sell.
